Then we dug a deep pit in the sand, filled it with hot coals, and placed a whole succulent sheep marinated with aromatic spices, rice, and vegetables into the pit.
As the meat slowly roasts to tender perfection, the air is filled with the enticing aroma of cumin, cardamom, and other exotic spices .
Finally, when the mandi is ready, it is unearthed from the pit, and the rich, flavorful aromas envelop the gathering .
