Resep Korean Flying Chicken (untuk 12 porsi)

Bahan brine:
2 ekor ayam broiler @800 gr
2,5 sdm air jeruk nipis
3 sdm garam
4 sdm gula pasir
6 siung bawang putih, geprek
700 ml air

Bahan tepung kering:
115 gr tepung terigu protein sedang
130 gr maizena
¾ sdm bubuk bawang putih
¾ sdm bubuk bawang bombai
1 sdm kaldu ayam bubuk
1 sdt garam
½ sdt merica
2 sdt baking powder, opsional

Bahan tepung basah:
300 ml air
200 gr tepung kering

Bahan spicy powder:
1 ½ sdm bubuk smoked paprika
½ sdm cabai bubuk halus
½ sdm gula pasir, haluskan
½ sdt garam
½ sdt kaldu ayam bubuk

Bahan lainnya:
Minyak Goreng Fortune
Nasi putih Beras Premium Fortune

Lainnya:
1. Belah 2 ayam melebar menjadi potongan bekakak lalu di dalam wadah campurkan garam, gula, air, bawang putih geprek, dan air jeruk nipis, aduk rata
2. Masukkan ayam, tutup dengan cling wrap, masukkan ke dalam kulkas selama 24 jam
3. Campurkan tepung terigu, maizena, bubuk bawang putih, bubuk bawang bombai, kaldu ayam bubuk, garam, merica, dan baking powder, aduk rata
4. Untuk tepung basah, campurkan sebagian tepung kering dengan air, aduk rata
5. Keringkan ayam dengan tisu, masukkan ke dalam tepung kering lalu tepung basah, ratakan
6. Panaskan Minyak Goreng Fortune di api sedang lalu masukkan ayam, goreng hingga kecokelatan selama 13-15 menit, tiriskan
7. Untuk bumbu taburan, campurkan bubuk smoked paprika, bubuk cabai, garam, gula, dan kaldu ayam, aduk rata
8. Korean flying chicken siap disajikan

Korean Flying Chicken Recipe (yield 12 servings)

Brining ingredients:
2 pc broiler chicken @800 g
2.5 tbsp lime juice
3 tbsp salt
4 tbsp sugar
6 clove garlic, pounded
700 ml water

Dry Coat ingredients:
115 g all-purpose flour
130 g cornstarch
¾ tbsp garlic powder
¾ tbsp onion powder
1 tbsp chicken powder
1 tsp salt
½ tsp pepper
2 tsp baking powder, optional

Wet Batter ingredients:
300 ml water
200 g dry coat

Spicy Powder ingredients:
1.5 tbsp smoked paprika powder
½ tbsp fine chili powder
½ tbsp sugar, powdered
½ tsp salt
½ tsp chicken powder

Other ingredients:
Fortune Oil
Fortune Premium Rice Grains

Steps:
1. Halve the chicken and butterfly it. In a bowl, combine salt, sugar, water, pounded garlic, and lime juice. Mix well.
2. Add the chicken in. Cover with plastic wrap and keep in the fridge for 24 hours.
3. Combine flour, cornstarch, garlic powder, onion powder, chicken powder, salt, pepper, and baking powder. Mix well.
4. For the wet batter, combine some of the dry coat with water. Mix well.
5. Pat the chicken dry with paper towels. Coat with the dry coat and dip into the wet batter evenly.
6. Heat Fortune Oil on medium heat. Add the chicken in and fry until browned for 13-15 minutes. Set aside.
7. For the sprinkles, combine the smoked paprika powder, chili powder, salt, sugar, and chicken powder. Mix well.
8. Korean Flying Chicken is ready to serve.
