Kovakkai Varuval Recipe || Spicy Tindora Fry For Sambar, Rasam & Curd Rice

Intro:
Although a simple recipe with a simple vegetable, this quick and easy poriyal is unrivalled in taste. When served with sambar, paruppu rasam or curd rice, it can be enjoyed to it's full taste!

Ingredients:
300gms kovakkai/tindora
1 med sized onion -chopped finely
1 tbsp chilli powder
1/4 tsp mustard
and salt to taste

Method:
1. Wash the kovakkai/Tindora and chop into thin round slices.
2.In a pan heat 2 tbsp of oil and crackle 1/4 tsp mustard and add in the chopped 1 med onion and fry until golden.
3. Now add in the thinly chopped kovakkai slices.
4. Then add the chilli powder and salt to taste. Mix well to combine. Cover and cook for 10 mins in low flame or until done. Check in between wether if it is cooked well.
5. Remove the lid and cook in low flame & keep frying until well done and gets roasted well. Turn off the flame.
Delicious Kovakkai Varuval is ready to serve with any sambar, paruppu rasam and also especially with Arachuvitta Murungakkai sambar.
Tips: Goes well with Sambar, Arachuvitta sambar, Curd rice and Paruppu Rasam.
