Appellation: Paso Robles, California
Winemaking: High quality fruit sourced from the Paso Robles AVA including
El Pomar, Geneseo, and Templeton Gap sub appellations. The backbone of
this Cabernet blend is made up of small lot fermented Cabernet Sauvignon
grapes that were pumped over three times a day to extract its rich color, flavor
and tannin. Petite Sirah was added for additional body and depth, creating a
classic Bordeaux-style blend with a new world flair. Aged in a mix of New
French and American Oak.
Tasting Notes: Dark garnet in the glass, this Cabernet Sauvignon displays
aromas of vanilla, dark fruit flavors of b lackberry and finishes with chocolate
and tobacco notes. On the palate this wine has a lush, silky texture with hints
of cherry and currant fruit, sage, and roasted fig. Roasted red bell peppers
and black truffle notes combine with a full variety of e xotic spices to allure
the senses. Our Paso Robles appellation continues to produce expressive and
balanced Cabernet Sauvignon fruit with signature quality and finesse.
