Diabetic-Friendly Coconut Mince & Mozzarella Bake | By Nyakiringa Wa Ng’ang’a | Qande Channel

Welcome back to Qande Channel!
Today I’m sharing a wholesome, flavour-packed dish that’s both comforting and diabetic-friendly — my Coconut Mince & Mozzarella Bake.
It’s rich, creamy, herby, and oh-so-satisfying — perfect for anyone who wants healthy food that still feels indulgent.

Ingredients

Main Ingredients

500 g reduced-fat minced beef

1 onion, finely chopped

1 cup mixed vegetables (carrots, peas, bell peppers, or courgettes)

2 tbsp tomato paste

½ cup coconut milk

1 ball mozzarella cheese, sliced or shredded

1 tbsp olive oil or cooking oil

Salt and black pepper to taste

Herb & Spice Mix (use about ½ tsp of each, or more for stronger flavour)

Garlic powder or 2 cloves fresh garlic – base flavour

Paprika – smoky sweetness

Curry powder – depth and warmth

Thyme – classic herby aroma

Oregano – Italian touch

Rosemary – earthy undertone

Chilli flakes or cayenne – optional heat

Fresh coriander or parsley – for garnish

Instructions

1️⃣ Sauté the base
Heat oil in a pan. Add onions and cook until golden.
Stir in garlic (if using fresh) and the herb & spice mix. Cook for 30 seconds to release aroma.

2️⃣ Add the mince
Add minced beef and stir, breaking it up as it browns.
Season with salt and black pepper.

3️⃣ Add vegetables & tomato paste
Mix in the tomato paste and chopped vegetables.
Cook for 2–3 minutes until fragrant.

4️⃣ Pour in coconut milk
Add coconut milk and simmer for 7–10 minutes until thick and creamy.
Taste and adjust seasoning.

5️⃣ Assemble & bake
Transfer the mixture into a clear oven-proof dish.
Top with mozzarella slices or shredded cheese.
Bake at 180°C (350°F) for 10–15 minutes, until the cheese melts and turns golden.

6️⃣ Garnish
Sprinkle with fresh coriander or parsley before serving.

🍽️ Serving Ideas

Serve with cauliflower rice, brown rice, or chapati.

For a low-carb meal, pair with a green salad or steamed spinach.

Leftovers reheat beautifully the next day!
