🍰 Honey Jam Coconut Cake
🔸 Ingredients;
🎂For the Cake Batter:
•Curd – ¾ cup
•Sugar – 1 cup
•Oil – ½ cup
•Milk – ½ cup
•Maida (All-purpose flour) – 1 ½ cups
•Baking powder – 1 tsp
•Baking soda – ½ tsp
•Salt – a pinch
🍯For the Sugar Syrup:
•Honey – 2 tbsp
•Sugar – 2 tbsp
•Water – 4 tbsp
🍒For Topping / Decoration:
•Fruit mix jam – as needed
•Butter / butter sheet – as needed
•Desiccated coconut – as needed
✨Other:
•7-inch baking tray
🔸 Method:
Prepare the Batter :
•In a mixing bowl, whisk curd, sugar, oil, and milk until smooth.
•maida, baking powder, baking soda, and salt.
•Gently fold the dry ingredients into the wet mixture.
Baking :
•Grease or line the 7-inch tray with butter/butter sheet.
•Pour the batter into the tray.
•Bake at 180°C for 30–40 minutes (until a toothpick comes out clean).
Prepare Sugar Syrup :
•Mix honey, sugar, and water.
•Heat slightly until sugar dissolves.
Assembling :
•Once the cake is baked and cooled, brush with sugar syrup.
•Spread fruit jam evenly on top.
•Sprinkle desiccated coconut for garnish.
