This is my favorite spring and summer cupcake recipe! These cupcakes are so easy and fun to make, and are so light and yummy! I also made homemade whipped cream for the first time! Watch to see how it turned out 😉

this was a fun, chit chat bake with me. I shared struggles I am currently working on as I work to improve myself. Come spend some time in the kitchen with me and lets grow together.

RECIPE:

For the Cupcakes:
-1 box of white cake mix
-1 egg
-1 cup of sour cream
-1/4 cup of water

For the filling:
-1-2 cups of sliced strawberries
-1-2 TBS of sugar
-2 cups of whipping cream
-1/2 cup of powder sugar
-1 tsp vanilla.

Cupcakes:
-Mix all of the ingredients in a bowl. Mix until combined.
You want the batter to be a bit thicker than a cake batter, kind of like a cross between a cake batter and biscuit batter. You may need to adjust the water.
-Bake at 350 for 18-20 minutes

Filling:
-Slice strawberries and place in a bowl. Sprinkle sugar over top and mix. Set aside for 30 minutes.
-Blend strawberries in a blender until smooth.
-Make the whipped cream - Start by chilling your bowl in the fridge. Pour in cream, powdered sugar, and vanilla. Beat on high for 2-6 minutes or until you have soft peaks.
-Divide the whipped cream in half. Slowly pour in strawberry mixture to one half of the whipped cream, gently folding it in.
-Place regular whipped cream, and strawberry whipped cream into separate pipping bags.

Assembly:
-Allow cupcakes to cool completely
-Cut off the very tops of the cupcakes. You don't want the lids to be too thick.
-Pipe strawberry mixture onto the main base of the cupcakes.
-Place cupcake top on.
-Top with regular whipped cream.
-Top it off with strawberry slice.
