⭐ A new specific inactivated #yeast to enhance the elegancy of red #wines.

During wine ageing, the wine sensory characteristics change, and it becomes more complex. This phase can last from a few weeks to several months depending on the type of wine. Wines rich in acidity or tannins generally require a longer #maturation.

🍷 Applied towards the end of alcoholic #fermentation, PURE-LEES ELEGANCY™, our new specific inactivated yeast, allows the removal of aggressive #tannins and the improvement of the wine texture quality, leading to wines with more elegancy.

✔Produced with our innovative HPH Process, PURE-LEES ELEGANCY is highly concentrated in insoluble fractions allowing an optimal sorption of harsh, astringent and bitter tannins. It can be used as an alternative to yeast lees in wine ageing.
Due to the very high interaction with the wine matrix, the effect of PURE-LEES is already noticeable even after a few days of contact.
