Here's the original recipe from The Colossal Cookie Cookbook:
Quatro Formaggi
1T fresh grated Parmesan cheese
1T fresh grated blue cheese (Roquefort, Danish or Stilton)
1T fresh grated Swiss or Edam cheese
1T fresh grated Cheddar cheese
1 C all-purpose flour
pinch of salt
1 stick lightly salted butter, softened
1t dried oregano

Preheat oven to 350 F. Grease or line two baking sheets with nonstick baking parchment.
Mix all the cheeses together. Sift in the flour and salt. Make a well in the centre and add the butter and oregano. Using a round bladed knife or fingertips, blend the mixture together. Shape into a soft dough.
Divide into 15 walnut-size balls and place on baking sheets, spaced about two inches apart. Flatten slightly with a fork. Bake for 20 to 25 minutes until lightly golden and firm to the touch. Cool on the sheets. Best served slightly warmed.
Store in an airtight container for three to four days, or freeze for up to three months.
