Introduction
Apricot Kofta Curry is a very exquisite dish of the Kashmiri cuisine. Koftas have a very nice sweet and tangy taste. The term kofta is mostly referred to as Indian meatballs. Generally, meat is mixed with spices and often other ingredients to form a paste. They can be grilled, fried, steamed, poached, baked, or marinated, and may be served with a rich spicy sauce or in a soup or stew. In this recipe, the pan-fried koftas are made with apricots, chicken mince and served in rich, creamy gravy. Mostly, kofta is served in a tomato-cream based gravy. Preparation of the Marinade
200 gms Chicken Mince
1 tsp Cardamom Powder
1 tsp White Pepper Powder
Salt (as required)
1 Egg White
1/2 cup Bread Crumbs
1 tbsp Saffron Water

Preparation of Onion Paste
1 tbsp Oil
1 cup Onion (sliced)
2 tbsp Ginger-Garlic Paste
1 tsp Turmeric Powder
3 tbsp Curd
Water (as required)

Preparation of the Gravy
2 tbsp Oil
1 Bay Leaf
1 tbsp Cumin Seeds
2-inch Cinnamon Sticks
3 Green Cardamom Pods
8-10 Cloves
1 cup Tomato Purée
1 tbsp Coriander Seed Powder
1 tsp Turmeric Powder
1 tsp Red Chilli Powder
1 tbsp Garam Masala Powder
1/2 cup Cashew Nut Paste
Salt (as required)

Steaming & Frying the Koftas
Oil (for greasing)
1/2 cup Apricots (sliced)
1 tsp Oil

For Garnish
Fresh Cream
Coriander Leaves

Kofta or Köfte is a family of meatball or meatloaf dishes found in South Asian, South Caucasian, Middle Eastern, Balkan, and Central Asian cuisines.
