Ingredients

270g. (2 3/4 cups)porridge oats(half blended and the other half as is)
100g. (3/4 cups with a little extra) plain white all purpose flour
100g. (1/2 cups)caster sugar
1/2 tsp bicarbonate of soda or bread soda.
225g (1 cup) softened butter

Preheat the oven to 180oC (350oF) or gas mark 4

Method

put all the ingredients into a mixing bowl and mix until just combined to a dough.
next take little pieces of dough in your hand and roll into little balls(for the coffee shop )about two tablespoons or larger, the size you wish to make them, with your hand flatten them slightly and mark them with a fork, you can also roll them into a log and cut them into slices about one inch each. Leave for half an hour in the fridge to firm up and then place them on a large greased baking tray and allowing room for spreading.
Bake for approximately 15-20 minutes, the oat buiscuits should look a little golden on the edges when cooked.
Allow to cool on the baking tray for 5 minutes before placing biscuits on the wire rack to cool.
