Recipe:
Ingredients:
1 cup full-fat cottage cheese
4 large eggs
1/4 cup unsweetened almond milk
1/4 cup browned butter
2 tablespoons Greek yogurt
1/2 cup almond flour
1/4 cup coconut flour
2 tablespoons flaxseed meal
1/4 cup erythritol or preferred keto sweetener
1 teaspoon vanilla extract
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon ground cinnamon
1/4 cup sugar-free chocolate chips or blueberries
Streusel Topping:
2 tablespoons almond flour
1 tablespoon butter (cold, cubed)
1 tablespoon erythritol
Pinch of cinnamon
Instructions:
Preheat your oven to 350°F (175°C) and line a muffin tin with 12 paper or silicone muffin liners.
Blend the wet ingredients (cottage cheese, eggs, almond milk, browned butter, Greek yogurt, vanilla extract) until smooth.
Mix the dry ingredients (almond flour, coconut flour, flaxseed meal, erythritol, baking powder, baking soda, salt, and cinnamon) in a large bowl.
Combine wet and dry ingredients. Fold in chocolate chips or blueberries.
Distribute the batter evenly among the muffin liners.
Prepare the streusel topping by mixing almond flour, butter, erythritol, and cinnamon. Sprinkle on top of each muffin.
