Dukkah and Ful Medames Recipe with Chef Ranveer Brar
Duqqa or dukkah, is an Egyptian and Middle Eastern condiment consisting of a mixture of herbs, nuts (usually hazelnut), and spices. It is typically used as a dip with bread or fresh vegetables for an hors d'œuvre. Pre-made versions of duqqa can be bought in the spice markets of Cairo, where they are sold in paper cones, with the simplest version being crushed mint, salt, and pepper. The packaged variety that is found in markets is composed of parched wheat flour mixed with cumin and caraway. In the Hejaz region it has been part of the regional cuisine for decades.
Ful Medames
In a pan add 1 cup uncooked fava beans,
add salt to taste, pour water as required,
cover the pan and
let the beans get semi soft
Once done remove the beans, chop
them and keep aside
In another pan add 1 cup
cooked fava beans, salt to taste,
100 ml water, mash the beans with
help of spatula and cook till done
Remove Ful in a serving bowl, add
the chopped semi cooked fava on top
followed by parsley sprigs, lemon
wedges, chilli flakes, feta cheese and
chopped garlic
Duqqa or Dukkah
In a pan, add 1 tbsp cumin seeds,
2 tbsp coriander seeds and 2 tbsp
sesame seeds and let it crackle
Add 2 tbsp hazelnuts, 1 tbsp pistachios
and toss
Coarsely grind the spices together
in a mixer
Slice 3 pcs pita bread in half, pour olive oil
on pita, sprinkle Dukkah and pour more
olive oil and toast pita till crisp
Serve Dukkah topped toasted Pita
