To make the best cocktail foam
I recommend using a pint size cream whipper (500ml) with 300 ml of liquid.

Than add 1.8 gr of Methyl Cellulose and 0.5 gr of xanthan gum.

Blend the liquid with the powders at high speed for 10 seconds.

Place in your cream whipper.

Charge it once with a N2O Cartrdige.

Shake 30 seconds.

Charge it a second time with another N2O cartridge.

Place it in the fridge 30 minutes before using it.

HOW TO MAKE THE BEST COCKTAIL FOAM : GRAPEFRUIT EDITION
105 ml Cold and filtered Grapefruit juice
45 ml Cold Simple Syrup
15 ml Cold and filtered Lime juice
15 ml Cold Aperol
120 ml Cold Water
1.8 gr Methyl Cellulose
0.5 gr Xanthan Gum

Place everything in a blender and blend at high speed for 10 seconds.

Add the mix to your cream whipper.

Charge it once with a N2O Cartrdige.

Shake 30 seconds.

Charge it a second time with another N2O cartridge.

Place it in the fridge 30 minutes before using it.

HOW TO MAKE THE REVISITED HEMINGWAY DAIQUIRI
2 oz White Rum
1 oz Lime Juice
0.3 oz Maraschino
0.5 oz Simple Syrup
One a grapefruit zest split in two

In a shaker, add the rum, lime, maraschino, syrup and half a grapefruit zest.
Shake with ice 10 to 15 seconds.
Fine strain in a cocktail coupe.
Top up with the grapefruit foam.
Express the other half of the zest over the cocktail
