It’s still summer for a few more weeks and the sun is still out. So I’m sharing a personal favourite recipe - my Summer Orzo Salad. Full of colour, flavour and healthy ingredients it’s the perfect refreshing salad to enjoy in the garden while the sun is still up.

Recipe
For the dressing
1 tbsp chopped chives
1 tbsp chopped parsley
2 tsp honey
2 lime, zest and juice
5 tbsp extra virgin olive oil
Salt & freshly ground black pepper

For the salad
150g cherry tomatoes on the vine, sliced
12 black olives, pitted and sliced in half
200g green beans, cut into 3rds, cooked for 4 minutes, then rinsed and placed into iced cold water

300g cooked warm orzo
Rocket leaves or any of your favourite salad leaves, to serve
Chive flowers, to garnish

Method
To make the dressing
Add the chives, parsley, honey, lime zest and juice into a jug or bowl
Pour in the oil and whisk very well
Season with salt & freshly ground black pepper

To prepare the salad
Add the warm orzo into a serving bowl
Pour in 3 tbsp of the dressing, stir well
Stir in the cherry tomatoes and black olives into the orzo
Drain the beans and add to the salad
Season with salt & freshly ground black pepper
Spoon onto a serving platter
Add a little more dressing
Garnish with chive flowers to serve
