How to make Filipino Pineapple Pie

✅Ingredients:

4 cups all-purpose flour
¼ cup powdered milk
2 ½ cups sugar, ½ cup separated
1 teaspoon salt
1 teaspoon baking powder
½ cup vegetable shortening
water
2 cups crushed pineapple
3 cups pineapple juice
1 ½ cups cornstarch
Egg wash (1 egg yolk + 1 teaspoon milk)

✅Instructions:

In a bowl, combine all-purpose flour, powdered milk, sugar, salt, and baking powder. Whisk until well combined. Add vegetable shortening, using your hands or a pastry cutter, and crumble the shortening into the flour mixture until it is grainy and crumbly.

Gradually add 1 ⅛ cups of water and use a wooden spoon to stir. Stir until the mixture forms a soft, dough-like consistency. Keep stirring until the dough clings together when pressed between your fingers.

Using your hands, gather the mixture together into a dough. Cover with a clean towel and allow to rest for about 30 minutes. Place the dough on a floured surface and briefly knead to make it smooth.

Divide the dough into two halves. On a floured surface, place the half-dough and roll it into a rectangle that is larger than 9x13 inches. Fold in half and lift. Place the dough in a lightly greased pan. Unfold and fit in the pan with some overhang. Set aside. Roll the other half of the dough into a 9x13-inch rectangle. Set aside.

In a deep pan, add 4 ¼ cups of water, 2 cups of sugar, and crushed pineapple. Stir to combine. Bring to a boil while stirring occasionally. Simmer for about 8 to 10 minutes.

Meanwhile, combine pineapple juice and cornstarch in a bowl. Stir until smooth. Lower the heat, pour the cornstarch mixture into the pan while stirring. Cook until the mixture thickens while stirring constantly. Remove from the heat and gently pour the filling over the crust.

Even out the filling using a spatula. Place the second dough over the filling, align it with the pan, and cover the filling. Arrange the dough, trim any excess, and seal the edges.

Using a fork, poke holes in the surface of the dough. Brush the top with egg wash. Bake in a pre-heated 350°F (180°C) oven for about 45-55 minutes.

Allow to cool completely for about 4 hours to overnight. Cut into triangles. Serve and enjoy!
