Walnut & Red Onion Nuggets with Lime & Chilli Tahini Sauce

INGREDIENTS (makes 16):
(for the nuggets)

250g walnuts (hazelnuts are also good or you can use a mixture of nuts);
100g (roughly 2 slices) of wholemeal bread, broken into pieces;
1 red onion, roughly chopped;
Handful of fresh herbs such as parsley or coriander (cilantro), roughly chopped;
2-3 garlic cloves, roughly chopped;
100g smoked vegan cheese (we use the Applewood brand in the UK), or a cheese of your choice, grated;
2 tablespoons of tomato puree;
1 heaped tablespoon of vegan mayo;
1 teaspoon of seasoning of your choice: we make our own ALL-PURPOSE seasoning and that is what we used (you can get the recipe from the video at this link    • MAKE YOUR OWN SEASONINGS! Jerk, curry powd...  ), but you could use a shop bought brand, or some smoked paprika if the cheese is not smoked, or Old Bay seasoning or just some pepper.
NB: as the cheese, mayo, seasoning and bread will already have salt in it, we do not add extra salt.

(for the sauce):
2 tablespoons of tahini;
4 tablespoons of cold water;
2 tablespoons of fresh lime juice;
1 tablespoon of maple syrup;
pinch of chilli powder or 6-8 drops of Tabasco sauce or a chili sauce of your choice.

Method:

1. Pre-heat your oven to 200 fan/220 conventional/350F.
2. If using a food processor, roughly chop your onion, garlic, bread and herbs and process. Then add your nuts and pulse again until a grainy texture is achieved.
3. If doing by hand, chop as finely as possible.
4. Place the contents into a bowl with the rest of the ingredients and shape into 12 nugget shapes.
5. Bake in the oven for 20-25 minutes. Thy will still be soft when you take them out of the oven but will firm up as they cool. 25 minutes cooking will result in crispier nuts but they are good at 20 minutes. You could also cook these in an air fryer or on a BBQ. If using a BBQ, watch the heat and turn them frequently.
6. Allow them to cool slightly as you make the sauce.
7. For the sauce, simply place all of the ingredients in a bowl and whisk together!
8. Serve in a wrap or in pitta bread with salad, or with a grain and salad on the side. Or have as part of a mezze-style spread. Enjoy!
OPTIONS:
If you don’t want to use the cheese or mayo you could try using 2 tablespoons of nutritional yeast and half a tablespoon of ground flaxseeds with 1 tablespoon of water. The texture once cooked will be slightly different but still delicious.
Try using a 200g packet of mixed dried fruit and nuts instead of just walnuts for a sweeter flavour.
