Preparation time - 20 mins
Cooking time - 50 to 60 mins
Serving -4

Ingredients:
Milk - 750 ml
Rice - 1 Cup
Sugar - 1 Cup
Charoli [Cuddapah almond] - 1 tbsp
Almonds - 10 to 12
Cardamom powder - 2 tsp.

Method for Chawal Kheer [Rice Kheer] :

-Wash and soak one cup of rice and soak charoli [Cuddapah almond] in warm water for 15 - 20 mins
-Take 750 ml of milk and bring it to boil on medium-high flame
-Chop of almonds in thin slices
-Now, Milk is boiling, keep stirring so It won’t stick to the pan.
-Keep scraping the pan sides, it gives more creaminess to the kheer
-Drain off a bowl of rice and cook it with boiling milk.
-Give a good mix
-Don’t stir until rice is cooked or bubbling on top like this.
-Make sure it’s cooked and keep Boiling for 5 more mins.
Rice is cooked, Take a masher or hand blender to break the rice. Reason for this to give more thickness and pudding consistency.
Add one cup of sugar and bring it to one boil
Add Dry fruits to kheer and mix.
Turn off gas and sprinkle cardamom powder.
Serve immediately or super chilled with puri.
