✅ Ingredients
Tomatoes - 3 large
Red onion - 1 small
Ginger - 2 cm
Garlic - 2 cloves
Green chillies - 3 or to taste
Fresh coriander leaves
Lemon juice - 2 tbsp
Toasted sesame seed powder - 3 tbsp
Salt - 2 tsp or to taste
Red chilli powder - 1 tsp
Cumin seeds - 1 tsp
Szechuan pepper - 1 tsp
Cooking oil - 1 tbsp
Water - ⅛ cup or as required for the consistency

➡️ Cooking instructions
Heat cooking oil in a pan in medium flame.
Fry cumin seeds until it starts crackling. Add szechuan pepper, ginger and garlic. Sauté for approximately 15 seconds.
Add onion and cook until onion starts turning translucent in colour. Add red chilli powder, salt and cook for another minute.
Add tomatoes, green chillies and cook until tomatoes start softening approximately 6 minutes with the pan lid on.
Once tomatoes soften, add water and sesame seed powder. Mix well. Finish off by adding coriander leaves and lemon juice. Let the mixture cool down.
Once cooled down, blend into fine achar. If it is too thick, add water as required.
*To make sesame seed powder, dry toast in a pan for about 2 minutes in low flame until golden brown. Grind and make a fine powder. (can be stored in a container)
*Add less or more water according to your preference on the consistency of achar you like.
