Scotch Eggs are one of my favorite pub snacks! Nothing beats a soft boiled egg that is wrapped in country sausage, breaded, and deep fried. This Scotch Egg Recipe is delicious! Pair it with a side of my Maple Chipotle Aioli and you'll have quite the snack or meal!!!

Ingredients:
6 large eggs
2lbs ground pork
1/2tsp ground coriander
1/2tsp rubbed sage
1/2tsp crushed red pepper
1/2tsp black pepper
2tsp salt
2cups flour
2 cups bread crumbs
2 eggs, for egg wash
1tbsp water, for egg wash
salt and pepper, for flour dredge
1/2cup mayo
1/3cup maple syrup or pancake syrup
1/4cup chipotle peppers including juice

Directions:
Soft Boiled Eggs-
Place a sauce pan over medium high heat and heat to just before a rolling boil. Carefully add your 6 eggs (be sure not to break the shell when putting them in). Boil eggs for 6-7 minutes. Remove eggs and place in an ice bath. Carefully peel eggs and set aside.
Country/Breakfast Sausage-
In a large bowl, combine the ground pork, coriander, sage, red pepper, black pepper, and the 2tsp of salt. Mix well. Set aside to rest for at least 30 minutes.
Assembly-
Assemble your fry station. Use 3 separate bowls! Bowl 1: Combine the flour and season generously with salt and pepper. Bowl 2: Make egg wash by whisking the 2 eggs and water together. Bowl 3: Is for the bread crumbs.
Take your soft boiled egg and completely wrap it in the country sausage, so that no egg is exposed. Place egg first in the flour dredge, then egg wash, then the bread crumbs. Let rest for 10 minutes.
Deep Frying-
Preheat fryer with canola oil to 375F. Add 2 scotch eggs at a time! NO MORE THAN 2!!!! Fry for 6-7 minutes or until the outside is golden brown and delicious! Remove the scotch eggs and allow to cool for 5 minutes.
Maple Chipotle Aioli-
In a food processor, combine the mayo, maple or pancake syrup, and chipotle peppers. Puree until smooth.

Serve and Enjoy :)
