I created this recipe since I live in a city where fresh ube and ube jam is not available or hard to find. Ube or Purple Yam flavoring is used for the recipe since it is easy to purchase online, least expensive, and more flavorful option.

Ingredients:
1 1/4 cups All Purpose Flour
1/2 teaspoon Baking Powder
1/4 teaspoon salt
1/2 cup melted unsalted butter
3/4 cups + 2 tablespoons light brown sugar
1 large egg (room temperature)
2 teaspoons ube extract/flavoring

Pan: 11x7
Oven Temp: 350 degrees F or 175 C
Bake time: 15 to 17 minutes or until tester comes out clean
