Palak Vada or Spinach Fritters from Maimoona Yasmeen’s Recipes

Ingredients:

Split Bengal Gram/chana dal: 150 grams
Chopped spinach: 1 standard cup
Whole green chillies: 3
Salt: 3/4th teaspoon
Cumin/zeera powder: 1/4th teaspoon
Turmeric powder: 1/4th teaspoon
Crushed garlic: ½ teaspoon
Chopped coriander: 1 ½ tablespoon
Diced onion: ½ standard cup
Chickpea flour/besan: 2 tablespoons
Oil: for frying

Procedure:

1. Soak chana dal or split Bengal gram overnight or for about 6 to 8 hours.

2. Next morning, drain the water thoroughly.

3. Add whole green chillies and salt to this Bengal gram and grind together roughly.

4. Wash and strain chopped spinach.

5. To the ground paste of bengal gram, add cumin or zeera powder, turmeric powder, crushed garlic, chopped coriander, chopped spinach and diced onion.

6. Mix well. Add chickpea flour or besan for the binding according to the consistency (here I’ve added 2 tablespoons chickpea flour).

7. Mix again thoroughly.

8. Add oil for frying. When the oil is hot, make flat fritters without using water.

9. Lower these fritters into the oil and fry on both sides till they turn brown and crispy.


Palak Vada or Spinach Fritters are ready.
