Ingredients: makes 16-22 meatballs
1 1/2 lb lean ground beef
1 cup plain breadcrumbs
2 tsp sal
2 tsp black pepper
1 1/2 tsp onion powder
1 1/2 tsp garlic powder
1 tsp oregano
1/2 tsp dried epazote
1/2 tsp ground cumin
1/2 cup hatch peppers
1/2 onion; finely diced
1/4 cup finely chopped cilantro
4 minced garlic cloves
1 egg
Queso Oaxaca cut in small cubes
For the salsa verde
8 tomatillos
4 Chile serranos or jalapeños
1/2 small onion
Handful of cilantro
4 garlic cloves
1 cup hatch peppers
1 1/2 cup water or chicken broth (OPTIONAL I used 1 tbsp bouillon with 1/2 tsp salt)
