In this video, we show you a Maharage Recipe, which is made using Kidney Beans in Coconut Milk. Maharagwe is the Swahili name for these East African Style Coconut Kidney Beans which are very popular in Tanzania and Kenya. Maharage (or Maharagwe) are absolutely delicious and nutritious Kidney Beans that have a rich, creamy coconut milk based curry or masala.

To make the Maharage Recipe (Kidney Beans in Coconut Milk) you will need:
3 tbs oil
1/2 tsp cumin seeds (jeera)
1/2 tsp fenugreek seeds (methi)
1/2 tsp mustard seeds (rai)
6-7 curry leaves
1/4 tsp asafoetida (hing)
1 tbs grated ginger
1 tbs grated garlic (we're using frozen ginger, garlic and green chilies)
1/4 tsp carom seeds (ajwain)
1/2 tsp turmeric powder (haldi)
1/2 tsp Kashmiri chili powder
1 tsp coriander powder (dhania)
salt to taste
1 medium-sized tomato blended in the grinder
1 tbs crushed green chilies (or to taste)
1 tbs tomato puree
a little hot water depending on the consistency you prefer
1 tsp sugar
1 whole bullet chili
1 cup kidney beans that were soaked overnight with 1/4 tsp bicarbonate of soda, and then boiled in salt water until soft
1 cup coconut milk
1-2 kokum (this gives a tangy flavour but you can use lemon juice instead)
1/2 tsp cumin powder
1 tbs lemon juice
1/4 tsp black pepper
fresh coriander
extra coconut milk for garnishing
