Dal Vada
(Moong-Toor Dal)

Ingredients :

For Soaking Dals :
¾ cup - Moong Dal
¼ cup - Toor dal / Arhar Dal (Pigeon Pea Lentils)
2 cup - Water (As Needed)

Other Ingredients For Vada :
¾ cup - Chopped Onion
1 tsp - Grated Ginger
1 tsp - Grated Garlic
Pinch Of Asafoetida (Hing)
½ tsp - Cumin
1 tbsp - Chopped Curry Leaves
2 tbsp - Chopped Coriander Leaves
1 tbsp - Chopped Mint Leaves
1 tbsp - Chopped Green Chilies
1¼ tsp - Salt
Oil For Deep Frying

Directions :

For Soaking Dals :
Take ¾ cup moong dal in a colander
Add ¼ cup toor dal
Wash and rinse with water
Remove the lentils in a bowl
Add 2 cup water
Cover and soak it for 2 hours
After 2 hours
Drain the soaked lentils in a colander

Making Dal Vada Mixture :
Keep 3 tbsp whole lentils aside
Add soaked lentils in a mixer-grinder
Grind in a coarse mixture (Do not add water while grinding)
Remove the mixture in a bowl
Add ¾ cup chopped onion
Add 3 tbsp soaked whole lentils
Add 1 tsp grated ginger
Add 1 tsp grated garlic
Add pinch of hing
Add ½ tsp cumin
Add 1 tbsp chopped curry leaves
Add 2 tbsp chopped coriander leaves
Add 1 tbsp chopped mint leaves
Add 1 tbsp chopped green chilies
Add 1¼ tsp salt
Mix well
Apply some oil to hands
Make small or medium sized ball
Flatten them into a pattie
Place them on a plate
Repeat the same process
Keep it aside

For Baking Dal Vada :
Line the baking tray with a parchment paper
Place the dal vada on the tray
Brush some oil (Optional)
Bake at 400 °F (200 °C) for 20 minutes
Remove the tray from the oven
Remove the dal vada on a plate
Baked dal vada is ready to serve

For Air frying Dal Vada :
Place the dal vada in the basket
Brush some oil (Optional)
Air fry them at 370°F (180 °C) for 17 minutes
Remove the basket
Remove the dal vada on a plate
Air Fried dal vada is ready to serve

For Deep Frying Dal Vada :
In a medium heated oil, gently slide the dal vada
Fry until they turn golden and crisp
Drain the oil
Remove them on a kitchen paper towel
Dal Vada is ready to serve
