The Dish: Grandma Doodle's Key Lime Pie

Ingredients:
Pie Crust (you can buy a pre-made crust or make from scratch)
1.5 cups regular graham crackers, crushed
1/3 cup sugar
6 tsp. butter, melted
Filling
2 14 oz cans sweetened condensed milk
1/2 cup light sour cream
3/4 cup Key lime juice
Whipped cream for garnish
Use your favorite canned variety...or here's a simple whipped cream recipe from scratch:
1 cup heavy whipping cream (Heavy gives the best texture)
1/2 cup powdered sugar
1 tsp. vanilla extract
Beat cream and powdered sugar in a mixer until stiff peaks form. Add vanilla. Spread over the entire top of the pie or pipe along the edge.

Method of Preparation:
Preheat the oven to 375 degrees. Then cut open a package of graham crackers. Put them in a plastic bag and crush them. Put the crumbs in a mixing bowl with sugar and butter. Blend well.

Pour the crumbs into a pie pan a little at a time... and press down until it forms a crust and is full up to the sides.

Put the crust into the oven and bake at 375 for about 7 minutes.
When it's done, take the temperature down to 350 degrees.

Now start on the filling. Juice the key limes, and pour the juice into a mixing bowl. Add light sour cream and sweetened condensed milk. Mix well.

Pour the filling into the crust and shake it ever so slightly to smooth it out.

Bake the pie in the oven at 350 degrees for about ten minutes...
when it's done, let it cool- then chill for 3 hours in the refrigerator.

To Plate:
Garnish with whipped cream and it's ready to eat!

Serving suggestion: Iced Coffee
