In a bowl, mix the turmeric powder, chili powder, cumin powder, garlic paste, ginger paste, salt, and lemon juice.
Rub this marinade generously over the fish, ensuring it gets into the slits (if using whole fish).
Cover the fish and let it marinate for at least 30 minutes (or up to 2 hours for deeper flavor).
3. Prepare the Coating:
In a shallow dish, mix the all-purpose flour, cornmeal (if using), black pepper powder, baking powder, and a pinch of salt.
4. Coat the Fish:
Dredge the marinated fish in the flour mixture, coating it evenly on all sides.
Shake off any excess flour.
5. Fry the Fish:
Heat oil in a frying pan or deep fryer over medium heat. The oil should be hot but not smoking (around 350°F/175°C).
Carefully place the coated fish into the hot oil. Do not overcrowd the pan.
