Homemade Chipotle Chicken Bowls 🍗🍚🌶️

Chipotle Chicken 🍗

-3 lbs chicken thighs, boneless and skinless
-1 tbs avocado oil
-2 tsp onion powder
-2 tsp garlic powder
-2 tsp ground cumin
-2 tsp smoked paprika
-2 tsp dried oregano
-2 tsp chipotle pepper powder
-1 tsp salt
-1 tsp pepper

Instructions:
-add chicken to a bowl with everything listed; mix well
-place on a baking sheet lined with parchment paper
-bake at 400F (205C) until internal temp is 165F (74C)
-rest for 10 min; cut into bite-sized pieces

Cilantro Lime Rice 🍚

-2 cups uncooked white rice
-3 cups water or chicken bone broth
-1/2 cup chopped cilantro
-juice of 3 limes
-2 tsp avocado oil
-1/2 tsp salt; more if needed
-dried bay leaf

Instructions:
-add washed rice and liquid to a rice cooker; top with a dried bay leaf and cook until light and fluffy
-transfer to a bowl; mix with the rest of the ingredients listed

Peppers & Onions 🫑

-3 bell peppers, thinly sliced
-1 large red onion, thinly sliced
-1 tbs avocado oil
-1 tsp garlic powder
-1 tsp dried oregano
-1 tsp salt
-1 tsp pepper

Instructions:
-add everything to a bowl; mix well
-sauté in a pan for 8-10 min until tender

Creamy Spicy Lime Sauce 🌶️

-1 cup greek yogurt or mayo
-1 tbs honey
-1/2 tsp chipotle pepper powder
-1/2 tsp garlic powder
-1/4 tsp salt
-juice of half a lime

-add ingredients into a small bowl; whisk until smooth
