Christmas Ham with Glaze and Pear Chutney

Ingredients:

For the ham:
2 kg gammon (ham), water (enough to cover the ham), carrots and leeks (for flavor), 1 onion (roughly chopped), black peppercorns and coriander seeds (crushed), 2 cinnamon sticks, 4 bay leaves.

For the glaze:
50-70 g demerara sugar, 2-3 tbsp Madeira wine, 2-3 tbsp honey, 2 tbsp sweet vinegar.

For the chutney:
1 onion, olive oil (for frying), 3 Williams pears, 2 cooking apples, fresh ginger (grated), a pinch of saffron, nutmeg and cinnamon (to taste), 50-70 g demerara sugar, 2 tbsp white wine vinegar, 30 g sultanas (raisins), 2 oranges (juice and zest), 3 tomatoes.

Instructions:

Cook the ham: Place the ham in a pot with water, vegetables, and spices. Bring to a boil, then simmer for 2.5 hours.

Prepare the glaze: Simmer demerara sugar, honey, Madeira wine, and vinegar until thickened.

Bake the ham: Remove the skin, score the ham, insert cloves, and brush with glaze. Bake at 190°C for 35 minutes, glazing every 5 minutes.

Make the chutney: Sauté onion in olive oil, add fruit, spices, sugar, and vinegar. Simmer until thickened.
