This necessary skill can provide many concentrated mushroom flavors that might otherwise be lost, if not done correctly. In this case I also use the warm water that the dried mushrooms were reconstituted in as part of a sauce making flavor additive. This reconstituting process can also be applied to other dried foods in whole or in part. Remember, dried foods take on a concentrated flavor once they are dehydrated. Sometimes certain fruits or vegetables should only be partially rehydrated for optimum effects for certain preparations.
