Ingredients:
• 2 lbs ground turkey
• 1 “Soup Bone”
• 2 Vidalia onions
• 1 Roma tomato
• 4-6 Yukon Gold potatoes
• 4-6 carrots
• 1 bunch of cilantro
• 1/2 bunch of mint
• 1/2 cup bread crumbs
• Salt and pepper to taste

Instructions:
1. Start the Stock:
• Bring the water to a boil on high heat for 30 minutes.
• Reduce heat to medium and keep the water boiling gently.
2. Prepare the Meatballs:
• Dice 1 onion, chop the cilantro, and mint.
• Combine in a large bowl with the ground turkey, bread crumbs, rice, salt, pepper, and egg.
• Mix by hand until fully incorporated.
• Form into 2-inch meatballs and set aside.
3. Add Flavor to the Broth:
• Quarter the remaining onion and the Roma tomato.
• Add them to the boiling water along with 2 tablespoons of sofrito (optional) and 1 beef bouillon cube.
4. Prepare the Vegetables:
• Wash, peel, and chop the carrots, celery, and potatoes into 1/2-inch pieces.
• Add the vegetables to the boiling broth.
5. Cook the Soup:
• Let the vegetables cook in the boiling water for 20 minutes.
• Add the meatballs to the pot.
