To Make Mint Paratha

Wheat Flour / Atta - 2 Cups
Mint Leaves
Ajwain - 1 Tsp
Salt - 1/2 Tsp
Oil - 2 Tsp
Boiled Milk - 1/4 Cup ( Optional )
Water
Dried & Crushed Mint Leaves
Ghee

To Make Masala Spice Mix

Salt - 1/4 Tsp
Turmeric Powder - 1/4 Tsp
Kashmiri Chilli Powder - 1 Tsp
Coriander Powder -1 Tsp
Cumin Powder - 1/2 Tsp
Garam Masala -1/4 Tsp
Chaat Masala - 1/2 Tsp

Method:

1. Take wheat flour, mint leaves, crushed ajwain seeds, salt in a large bowl and mix well.
2. Add oil and mix it all again. Add boiled and cooled milk and mix again.
3. Gradually add water to the flour mixture and prepare the dough.
4. Knead the dough for about 5 minutes and cover the bowl with a lid. Rest the dough for about 30 minutes.
5. Take a wide pan and add mint leaves to it.
6. Keep the flame on a medium and dry roast the mint leaves until the moisture is completely gone. Crush the dry roasted mint leaves and keep it aside.
7. For the spice powder mix, take salt, turmeric powder, red chilli powder, cumin powder, coriander powder, garam masala powder, chaat masala powder in a bowl and mix well. Keep it aside.
8. Now divide the dough into equal sized balls. Roll them thin and nice. Apply some ghee on the top and sprinkle the prepared masala powder along with crushed mint leaves.
9. Fold the rolled flat bread into small vertical pleats as shown in the video and keep the pleated dough aside.
10. Once again, dust the rolling surface with flour and roll the pleated dough. Make sure it is of medium thickness. Prepare all the parathas similarly and keep aside.
11. Heat a pan and place the rolled paratha. Flip it both sides and apply some ghee on both sides after the brown spots start appearing.
12. Once the parathas are nicely roasted, remove them from the pan.
13. Yummy and flaky Pudina Parathas are ready to be served hot with pickle/onion raitha/boondi raitha by the side.
