Make Coconut Milk Pulao with Brinjal Podi Curry with Chef Sunder | Recipecheckr

Today, we have a special lunch box menu for kids. This is Coconut milk pulao and its iconic combination which is Brinjal Podi curry.

Coconut Milk Pulao
Ghee - 1 ½ tsp
Whole garam spices - 1 tbsp
Star anise – 1 nos
Onion - 2 nos
Ginger garlic paste – ½ tsp
Green peas – 2 tsp
Green chili - 2 nos
Carrot - 1 nos
Basmati rice - 2 cups
Coconut milk - 2 cups
Salt - As per taste
Coriander leaves – A bunch

Brinjal Podi Curry
Mantra groundnut oil – 1 tsp
Bengal gram dhal - 2 tbsp
Urad dhal - 2 tsp
Coriander seeds - ½ tsp
Dry red chili - 10 nos
Curry leaves - a sprig
Idhayam Gingelly oil - 3 tsp
Mustard seeds – ½ tsp
Brinjal - 500 gms
Urad dhal - 1 tbsp
Asafoetida – 2 pinches
Roasted peanut - 2 tsp
Coriander leaves - A bunch
