Resep Creamy Garlic Mac & Cheese (untuk 6 porsi)
Bahan:
200 gr makaroni
1 sdt garam
Bahan saus:
1 sdm mentega tawar
10 siung bawang putih
1 sdm tepung terigu protein sedang
¼ sdt kunyit bubuk
½ sdt paprika bubuk / gochugaru
550 ml susu
170 gr keju quick melt
½ sdt garam
¼ sdt merica
1 sdt gula pasir
mozzarella, parut
keju parmesan bubuk (opsional)
Bahan sambal rawit kering:
15-20 buah cabai rawit merah
4 siung bawang putih
3 sdm minyak
½ sdt kaldu jamur
¼ sdt garam
Cara membuat:
1. Rebus makaroni dengan garam selama 8 menit, tiriskan
2. Panaskan mentega, masukkan bawang putih, masak hingga wangi dan kecokelatan di api kecil. Matikan api kemudian parut keju quick melt
3. Masukkan tepung terigu, kunyit bubuk dan paprika bubuk, aduk rata dan hancurkan kasar bawang putih, tumis hingga wangi
4. Masukkan susu secara perlahan sambil di aduk kemudian masukkan keju quick melt, garam, merica dan gula pasir, aduk rata
5. Masukkan makaroni, masak sesaat hingga mengental kemudian tuang setengah makaroni ke dalam wadah tahan panas
6. Tambahkan keju mozzarella parut, sisa makaroni, keju mozzarella dan keju parmesan bubuk di atasnya. Panggang di suhu 185 derajat celcius selama 15 menit
7. Di dalam food chopper, masukkan cabai rawit merah dan bawang putih, haluskan kasar
8. Panaskan minyak, masukkan cabai rawit yang sudah dihaluskan, masak sesaat kemudian masukkan garam dan kaldu jamur, masak sesaat di api kecil, tiriskan

Creamy Garlic Mac & Cheese Recipe
Ingredients:
200 g macaroni
1 tsp salt
Sauce ingredients:
1 tbsp unsalted butter
10 clove garlic
1 tbsp all-purpose flour
¼ tsp turmeric powder
½ tsp paprika powder / gochugaru
550 ml milk
170 g quick melt cheese
½ tsp salt
¼ tsp pepper
1 tsp sugar
Mozzarella, grated
Parmesan cheese powder (optional)
Dry Chili Sambal ingredients:
15-20 pc red Thai chili
4 clove garlic
3 tbsp oil
½ tsp mushroom bouillon
¼ tsp salt
Steps:
1. Boil macaroni with salt for 8 minutes. Drain.
2. Heat butter. Add garlic and cook over low heat until fragrant and golden. Turn off heat, then grate the quick melt cheese.
3. Add flour, turmeric powder, and paprika powder. Stir well and mash the garlic roughly. Sauté until fragrant.
4. Slowly add milk while stirring, then add quick melt cheese, salt, pepper, and sugar. Mix well.
5. Add macaroni. Cook briefly until thickened, then pour half into a heatproof dish.
6. Add grated mozzarella, the remaining macaroni, more mozzarella, and parmesan cheese powder on top. Bake at 185°C for 15 minutes.
7. In a food chopper, add red Thai chili and garlic. Coarsely chop.
8. Heat oil. Add the chili mixture. Cook briefly then add salt and mushroom bouillon. Cook on low heat. Set aside.
9. Creamy Garlic Mac & Cheese is ready to serve.
