Lemon & Coconut Slice
4 oz butter melted (not low fat spread)
zest of 2 lemons
1 tbsp lemon juice
1/2 cup condensed milk
8 - 9 oz crushed digestives or other plain biscuits
1 cup coconut

Icing
1 1/2 cups icing sugar
1/2 oz soft butter (not low fat spread)
2 tbsp water with a few drops of yellow food colouring
1 teaspoon lemon essence or lemon zest
2 tbsp coconut to decorate
extra water
