Every city has its favourite dishes, and iconic eateries that are famous for dishing these out. Bengaluru too has its tiffin rooms and thindi houses that are destinations unto themselves and occupy pride of place in every must-eat-at list. However, unknown to many there are equally worthy eateries that have been serving neighbourhoods quietly for decades. They don’t get celebrated beyond the communities they serve and are quite content with no accolades coming their way. In this episode, I visit one such establishment, SN Refreshments, which has been a cornerstone of JP Nagar, South Bengaluru for its limited but much sought after refreshment fare for 30 years. Idli
The idli is soft, porous and grainy in its texture thanks to the proportion of idli rice and urad dal in the batter, and some rice rava. When dunked into the chutney, the idli readily absorbs much of it, almost falling apart in the process. The chutney is unique, the spicy note of green chilli is accentuated by some jaggery, before submitting to the fresh crunch of the coconut, the bite of the roasted gram and the flavours of the mustard seed-curry leaf oggarane (seasoning). A tasty sambar served alongside is almost glossed over not for any fault of its doing, but because the idli-chutney combination are superstars on their own. When here, enjoy the idli, ladled over with plenty of chutney.

Vade
The texture of the vade is textbook, crisp to the touch with a lacey crunch on the exterior, yielding and porous on the inside speckled with some green chilli, coriander and curry leaves. fried onions and minimal spicing. Crunchy on its own from the first bite to the last, the vade finds its soulmate in the chutney, its airy texture submitting to the embrace of the condiment. And if you like a vada dip, the wholesome lentil sambar is happy to acquiesce with its sweet acidity of tomatoes and a whiff of asafoetida.

Masala Dosa
The masala dose is roasted to a golden brown with brownish striations. On the palate, it is crisp with a hint of tartness, and pleasing in its flavours minus the decadence of ghee and butter. The potato palya is creamy with the rich, savoury punch of onions. The chutney, though served in a ‘ghatti’ (solid consistency), is just as impactful as its runny avatar served with the idli and vade.

Chow Chow Baath
The khaara baath and kesari baath are cooked to a texture that is near ‘runny’. The veggies in the khaara baath change each day, this time around, it was the capsicum and one could taste its vegetal notes and the fried onions, alongside the toasty notes of the curry leaves and the sour twang of a drizzle of lemon. The kesari baath is pleasing and the sort that passes muster with the taste buds, making for a sweet end to a thindi experience at SN refreshments.
