RASPBERRY MOUSSE RECIPE

INGRIDIENTS:

Fresh raspberries 12 oz, extra for garnish.
Sugar ¾ cup
Agar Agar powder 2¼ tsp (vegan alternative to gelatin)
Heavy whipping cream 2 cup
Powdered sugar 6 tbsp
Vanilla extract 1 tsp
Mint leaves

PREPARATION:

1. Combine raspberries and sugar in a medium sauce pan. Medium heat.
2. Add lemon juice. Cook stirring occassionaly. Heat until berries soften and it thickens.
3. Remove from heat and strain through sieve to get all of the juice.
4. Add Agar Agar powder. Whisk.
5. Pour back in the sauce pan and whisk on low heat. Whisk for a minute or until Agar powder dissolved.
6. Remove from heat and cool to room temperature.
7. In four cups, pour 2-3 tablespoons of the prepared raspberry mixture and set the them aside.
8. Beat heavy whipping cream with powdered sugar in a large bowl, using an electric hand mixer, until whipped and fluffy (don't overbeat to avoid turning buttery).
9. Set aside half cup of whipped cream. Add vanilla extract and beat with electric mixer for a minute.
10. Add prepared raspberry mixture gradually into the remaining big batch of whipped cream and fold gently.
11. Transfer to piping bag fitted with a round tip and pipe over berry mixture in the cups.
12. Transfer the vanilla whipped cream to piping bag fitted with a star tip.Pipe it over the mousse.
13. Garnish with raspberry and mint.
14. Refrigerate for atleast 2-4 hours or until set.
