This soup is not only tasty, delicious, and satisfying but also pre-diabetes-friendly, with high fiber, lean protein, and nutrient-rich vegetables to help stabilize blood sugar. A touch of cinnamon and ground flax seeds add warmth and extra health benefits, making it a comforting bowl you can feel good about.
Perfect for meal prep, family dinners, or just a cozy solo lunch, this soup is chunky, creamy, and full of flavor, without any heavy cream or refined carbs.
Creamy Autumn Garden Beef Soup - 8 servings
2 lbs lean ground beef
1 medium onion, chopped
4 cloves garlic, minced
4 medium carrots, diced
4 medium potatoes, diced
2 cups frozen peas
2 cups corn kernels fresh or frozen
1 to 1½ cups frozen baby lima beans
(or any combination of veggies you like)
1 cup cooked brown rice
10 cups low-sodium beef or vegetable broth
1–2 tsp dried thyme or 2 tsp fresh thyme
2–3 tbsp parsley
1 cup plain Greek yogurt
2 tbsp ground flax seeds
1–2 tsp ground cinnamon
2 cups fresh spinach
Salt and pepper to taste
6 tbsp cornstarch mixed with ⅓ cup of milk or half and half (optional)
Brown the ground beef with the chopped onion and garlic until fully cooked.
Add the diced carrots and potatoes, then pour in the broth.
Simmer until the vegetables are tender but still intact.
Stir in the corn, peas, cooked brown rice, and thyme, parsley, salt, and pepper, adjusting to taste.
Remove from heat and stir in the Greek yogurt along with the ground flax seeds and a pinch of cinnamon for creaminess and flavor.
Fold in the fresh spinach and allow it to wilt gently.
Serve warm.
NOTE: Mix your yogurt with some water or milk until runny BEFORE adding it to your soup, or else it may ‘curdle’ a bit. Also, I found that this did not make it as creamy as I wanted, so I added the cornstarch/half-and-half mixture at the end, constantly stirring while the soup is just below a boil for a few minutes. Perfect!
