To get this trophy / achievement, you need to use the following strategy to achieve it.
Bombers in general are slower than other game fighters.

And being able to hit proton torpedoes is not an easy task.
Try to hit them closely with the primary weapon and shoot the torpedoes last.

In the Death Star Debris (Endor) map, the task becomes easier.
Since with the debris in space, there is no way to develop speed. This makes it easier to shoot down enemies in this way.

In Kamigo, there is more free area to fly. This makes ambushes difficult.
Try to reach the players who are focused on the goals.

The same idea holds true for Ryloth. The good news that AI enemies are considered in the count of this trophy / achievement.
