Indulge in the rich, nutty flavor of homemade Besan Ladoo! Made with roasted gram flour, ghee, and sweetened with bura sugar, these melt-in-your-mouth ladoos are a festive favorite. Garnished with crushed pistachios, they’re the perfect treat for any occasion.

Ingredients
3/4 cup Ghee (2 tbsp optional If the mixture doesn't bind easily)
2 cup ladoo besan
3/4 cup bura sugar (If need extra sweet add 1 cup bura sugar)
1/4 cup milk
1 tsp cardamom powder
4 to 5 pistachios for garnish

Method
o Take a bowl and add 2 cup ladoo besan (gram flour).
o In a small bowl, mix 1/4 cup of milk with 2 tablespoons of ghee. Pour this mixture over the besan.
o Rub the besan between your palms until it’s well combined, then let it rest for 30-40 minutes.
o After resting, sieve the besan mixture using a medium strainer.
o Grind any remaining lumps in a mixer (not too fine) and sieve again. Repeat the process if there are still lumps. It will be a perfect coarse texture
o In a heavy-bottomed pan, heat 2/3 cup of ghee. Once the ghee is slightly hot, add 2 cups of ladoo besan and mix well.
o If lumps form, don’t worry – they will loosen up as you roast.
o Stir continuously on low heat to avoid burning. As the roasting progresses, you'll notice the color changing and the texture becoming smoother.
o Continue roasting for 20-25 minutes until you get a perfect texture and a nice aroma. You can add 2 tablespoons of ghee for extra smoothness at this point.

o Tips to know if the besan is roasted perfectly:
The color changes to a slightly darker shade.
The mixture softens and becomes smoother.
A fragrant aroma fills the kitchen.

o Transfer the roasted besan to another bowl to stop further cooking. Stir it with a spoon to release extra heat.
o Let it cool to room temperature (it should be cool enough to touch, but not completely cold).
o Add bura sugar and mix well with your hands.
o Start shaping the ladoos by rolling them in your hands. If they don’t bind, add 2-3 tablespoons of melted, but not hot, ghee to help.
o Garnish with crushed pistachios and your Besan Ladoos are ready to enjoy!
