Black Pepper Powder 1 tsp
Curry Powder 1 tsp
Garcinia
Coconut Milk 1 Cup (2nd Extract)
Coconut Milk 3 Cups (1st Extract)
Scraped Coconut 4 tsp
Cumin Seeds 1 tsp
White Rice 2 tsp

Today, grandma and daughter will make Wax Gourd Curry, delicious served with hot steamed rice.

Wax Gourd, also known as Ash Gourd, White Gourd, Winter Gourd, Tallow Gourd, Ash Pumpkin, Winter Melon, Chinese Water Melon, Vellai Poosanikai, and Puhul, is a vine planted for its big edible fruit, which is consumed as a vegetable when fully matured. Benincasa is the only species in the genus.

The wax gourd is a tropical Asian vegetable that is often used in soups, curries, and stir fries, as well as being turned into a drink. The fruit has a long shelf life and can be stored for months. Mature fruits are green with a whitish waxy covering and contain flat white seeds.

This vegetable is unique to India, Sri Lanka, parts of South East Asia and China. It grows on a vine and mature gourds are pale gray in color with a white ash coating. This vegetable is known as ash gourd because of the ash.
