This is a re-upload of a video from my other channel. The original video was uploaded in 2021. I thought it would be interesting to revisit this video in order to compare prices and see how some staples may have drastically changed in price while others may have stayed the same. I will be doing updated versions of these videos very soon to see if the same budget is possible.

Today I will be sharing how to eat for $1 to $1.25 a day (depending on prices in your area) This is a twist on the Extreme Grocery Budget Meals Challenge. I will be showing you how to eat for $1.25 or less for 1 day a single person. As with all of my budget meals I am assuming you have seasonings and cooking oil and most basic common condiments. This is specifically for a extreme budget. If you are in need and cannot afford a budget this low or even to supplement a grocery budget this low please be sure to reach out to local resources in your area for assistance. No one should ever go to bed hungry.

Please remember all of the budget meals I share are super quick and easy and can be adjusted to fit any items that you may have on hand to supplement any of these recipes. The items and measurement will be included below and well as throughout the the video. I will also breakdown the price of each meal in the video.

These meals also make for amazing pantry challenge meals if you are looking to save money, stretch your grocery budget or maybe you're in a no spend /no waste month.

SHOPPING LIST (Walmart)
1- Roma Tomato 20 Cals
1- Banana 105 Cal
1- 7.05 Cal Pasta 210 Cals per serving (3.5 servings) 735 Cals total
1- Half Dozen Eggs 78 Cals per Egg (468 Cals total)
NOTE: Cooking Oil is optional water can be used. But if you use oil (I used about 6 Tbsp. total) 120 Cals per Tbsp. = 720 Cals
TOTAL CALORIES as prepared: 2,048


BANANA PANCAKE
1 Banana
2 Eggs (use 1 egg if you want a thicker pancake)

SCRAMBLED EGG
1 Beaten Egg (or 2 beaten eggs if you only used 1 for the pancake)

PASTA PANCAKE
1/2 Pack of Pasta
2 Cups of Water (add a little more if needed)
1/3 of the Tomato (Diced)
1 Egg
Italian Seasoning to taste
Black Pepper to taste
2 Tsp of Grated Parmesan (optional and only if on hand)

NOTES:

**Add an additional 5 minutes of cooking time than the package suggests & do not drain.
** For the best results: Refrigerate the pasta for at least 2 hours (overnight if possible; the longer the better)

PASTA MEAL:
1/2 Pack of the Pasta (cooked per package instructions) KEEP PASTA WATER
2/3 of the Tomato (Diced)
2 Cup Water (Preferably Pasta Water)
2 Eggs
1 Tbsp. Ketchup
1 Tsp Complete Seasoning
Italian Seasoning to Taste
