This week is a special one because every time I have a gathering I always make this delicious salad and EVERYONE I mean everyone always asks me for the recipe. Well, here you have it!! I finally made it lol.
This makes for an incredible side dish or snack. What I also love about red cabbage is that it's so filling and let's not forget the main point, nutritious.
Did you know that red / purple cabbage contains 10x more vitamins, cancer-fighting flavonoids, and a winning amount of antioxidants that improve eye, teeth, bone, & immune health? Like wow!! and obviously since this is raw it maintains all those amazing benefits and it helps fight inflammation. OK, wait a minute, I know your hearing / reading all about this inflammation in our bodies, but what is it really? Inflammation refers to your body's process of fighting against things that harm it, such as infections, injuries, and toxins, in an attempt to heal itself. When something damages your cells, your body releases chemicals that trigger a response from your immune system. However, when your body has a lot of inflammation things can turn bad, inflammation ignites a long list of disorders: arthritis, asthma, atherosclerosis, blindness, cancer, diabetes, and, quite possibly, autism and mental illness.
Yes, all of that and when it becomes chronic those symptoms worsen and can even lead to cancer. I was diagnosed with fatty liver back in February, and I made a decision to change my habits because if this were to get out of control it could lead to cirrhosis and I would need a liver transplant. The only way to get a nice new fresh liver would literally be waiting for someone to die and to see if we match, the chances of that are slim. I didn't want to be one of those stats, so I made fundamental changes to my eating habits, portions, and mental state. It's a process that I've learned to love, trust and grow from, so in a way, I'm happy I had such terrible news, because of that it inspired me to inspire others, like you! Let's grow together into having a healthy body and mind. Make it count!
Recipe:
1/2 a medium Red cabbage
a bunch Coriander
3-4 Green onions
1/2 a cup Sultana raisins
3/4 cup Walnuts
1 cup Tahini sauce
1/3 cup Apple cider vinegar
3/4 cup water
2 tbsp maple syrup
1 tsp salt
1 tsp black pepper
1 tsp granulated garlic
1 tsp oregano
Directions:
I love preparing this recipe in my food processor. I pre-cut half of the red cabbage and separate it into 3 batches. In your first batch add part of the cabbage, coriander, green onions, and walnuts. Repeat the process until completed. Make sure when you are processing the mixture pulsate it so it chops it and not puree it, this will give you a nice crunchy texture. Add the mixture in a large mixing bowl and then add sultana raisins and mix in. In a medium mixing bowl add water, tahini sauce, apple cider vinegar mix it well, then add maple syrup with salt, black pepper, granulated garlic, and oregano. Mix it well and you will notice the mixture will thicken, keep mixing until a smooth whitish sauce. Once ready, pour it into your cabbage mixture and combine it well, make sure you taste your sauce before combining it, adjust it to your taste. Store in an airtight container it keeps well up to 4 days in the fridge.
