Semolina / Rava - 1 ½ cups
Maida flour - ¾ cup
Rice flour - 2 tbsp
Hot oil - ¼ cup
Onion (finely chopped) - 2 ½ cups
Curry leaves (finely chopped) - 1/4 cup
Ginger (finely chopped) - 2 tbsp
Chillies (finely chopped) - 2
Cashews - a handful
Sesame seeds white - 4 tsp
Ghee - 4 tbsp
Salt - to taste

Method:
1. Take a large mixing bowl and add 2 ½ cups of chopped onions, 2 tbsp of ginger along with 1 finely chopped green chilli and finely chopped curry leaves along with salt and white sesame seeds.
2. Add 4 tbsp of clarified butter / ghee to this
3. Heat ¼ cup of oil on medium flame and add this hot oil to the mixing bowl.
4. Mix everything well.
5. Cover for about 10 min, till water is released).
6. After 10 min uncover and add 1 ½ cups of semolina/ rava to this along with ¾ cup of plain flour/ maida and 2 tbsp of rice flour.
7. Mix all this well.
8. Now add a handful of chopped cashews to this.
9. Mix everything well.
10. To this now add ½ cup of water approximately.
11. Make a dough out of this, the dough must have similar consistency as the chapati dough.
12. Heat oil for deep frying on medium flame.
13. Place a small portion of the dough on a parchment paper and press down gently with another parchment paper on top.
14. Remove the parchment paper. Let the dough not be too thin nor too thick.
15. Carefully separate the dough from the parchment paper and drop it into the hot oil.
16. Turn to fry both sides.
17. Maddur vada is ready.
18. Repeat the same for the rest of the dough.
19. Enjoy this tea time snack.
