To Make Cooked Pasta With Vegetables

Penne Pasta - 2 Cups
Oil - 2 Tsp
Butter - 3 Cubes
Garlic - 5 Cloves
Onion - 1 No.
Carrot - 2 Tbsp
Green Capsicum - 1/4 Cup
Red Capsicum - 1/4 Cup
Corn Kernels - 1 Cup
Salt - 1/2 Tsp
Pepper - 1/2 Tsp
Italian Seasoning - 1 Tsp
Chilli Flakes - 1 Tsp


To Make Creamy White Sauce

Unsalted Butter - 4 Cubes
Maida - 3 Tbsp
Milk - 1 Litre
Salt - 1/2 Tsp
Pepper - 1/4 Tsp
Chilli Flakes - 1 Tsp
Italian Seasoning - 1 Tsp
Cheese Slice - 4 Nos


Method

Start by boiling water in a pot with a pinch of salt. Add 1 cup of penne pasta and cook until al dente. Drain and set aside.

In a wide pan, heat 1 tbsp oil and 1 tbsp butter. Once hot, add 4–5 chopped garlic cloves, 1 chopped onion, 1/4 cup each of chopped carrots, green capsicum, red capsicum, and a handful of cooked sweet corn. Sauté for a few minutes until the veggies turn tender yet crisp.

Add salt, pepper, Italian seasoning or oregano, and chilli flakes to taste. Mix well. Add the cooked pasta and toss everything together.

To make the white sauce, melt 1.5 tbsp butter in a separate pan. Add 1.5 tbsp maida (all-purpose flour) and whisk until smooth and slightly golden.

Slowly pour in 1.5 cups of boiled and cooled milk, stirring continuously to avoid lumps. Season with salt, pepper, chilli flakes, and Italian seasoning.

Add 2 cheese slices or 1/4 cup grated cheese and let it melt completely.

Pour this creamy white sauce over the pasta and mix well. Let it simmer on low flame for 5 minutes.
