FOR THE DRESSING:
1/4 cup apple cider vinegar
4 T. olive oil
2 tablespoons whole grain (or Dijon) mustard
2 tablespoons brown sugar
1/8 teaspoon black pepper

1 medium cucumber (peeled, seeded and chopped)
1 apple (I used pink lady)
1 pear (I used Anjou)
1 medium red bell pepper (seeded and chopped)
1 sweet onion (chopped
1/2 teaspoon salt

Add additional salt and pepper (to taste) after the salad has chilled for 4 hours.
