Masala Fried Rice
This recipe combines fragrant rice with a flavorful mix of vegetables and spices, making it a delicious and satisfying meal.
Ingredients:
1 cup cooked rice
2 onions, chopped
1 garlic clove, chopped
2 green chilies, chopped
1 small cup chopped beans
1 capsicum, chopped
1 small cup chopped cabbage
1 small cup chopped carrots
A few curry leaves
Fresh coriander leaves, chopped
3 tablespoons oil
1 teaspoon cumin seeds (jeera)
1 teaspoon green chili sauce
1 teaspoon tomato sauce
1 teaspoon soy sauce
2 tablespoons fried rice masala
•turmeric
Salt to taste
Instructions:
Heat the oil: In a large pan or wok, heat the oil over medium heat.
Temper: Add the cumin seeds and let them sizzle until fragrant.
Sauté vegetables: Add the chopped onions, garlic, and green chilies. Sauté until the onions turn translucent and the spices become aromatic.
Add remaining vegetables: Add the chopped beans, capsicum, cabbage, and carrots. Sauté for 5-7 minutes, or until the vegetables are slightly tender-crisp.
Combine with rice: Add the cooked rice to the pan and mix well with the vegetables.
Add sauces and spices: Stir in the green chili sauce, tomato sauce, soy sauce, fried rice masala, turmeric and salt. Mix everything.
Combine with the rice: Add the cooked rice tothe pan and mix well with the vegitables and spices.
Garnish and serve: Garnish with chopped coriander leaves and serve hot.
Tips:
You can adjust the amount of green chilies and sauces according to your preference for spice.

Leftover cooked rice works perfectly for this recipe.
