Vendakkai Peanut Fry Recipe:
Oil - 3 tbsp
Peanuts - ¼ Cup
Urad Dal - ½ tsp
Chana Dal - ½ tsp
Dry Red Chilli - 3 nos
Curry Leaves - 1 Sprig
Garlic (crushed) - 4 Cloves
Lady’s Fingers (sliced) - 250 grams
Salt - ½ tsp
Lemon Juice - 1 tsp
Turmeric Powder - ¼ tsp
Coriander Powder - ½ tsp
Cumin Powder - ¼ tsp
Red Chilli Powder - ½ tsp

Cooking Instructions:

1. Heat oil in a pan and add the peanuts. Fry on low flame for 3-4 minutes or until it becomes golden brown and crispy. Remove it from the pan and set aside.
2. In the same oil, add urad dal, chana dal, dry red chilli, garlic and curry leaves. Then add the lady’s fingers and mix.
3. Add salt and lemon juice, and cook for 5 minutes on high heat. Don’t cover the pan with a lid.
4. Add turmeric powder, coriander powder and cumin powder. Saute for 5 more minutes on medium heat.
5. Add the fried peanuts and red chilli powder. Cook for 2 more minutes, then remove from the heat and serve with any rice dish.

Cooking Tips:
1. If you cover the pan with a lid, the lady’s fingers would turn slimy. So always fry it in an open pan.
