WRITTEN RECIPE

INGREDIENTS

Crepes
2 large eggs
1 1/4 cup milk
1 tbsp butter, melted
1 tbsp sugar
1 tsp salt
1 cup all purpose flour

Orange Sauce
2 tsp orange zest
3/4 cup orange juice
1/2 cup butter
1/2 cup sugar
1/3 cup orange liqueur

Whipped Cream
1/2 cup heavy cream
2 tbsp sugar

Garnish
3 orange slices
1 sprig mint

DIRECTIONS

Crepes
In a large bowl, combine eggs, milk, butter, and vanilla extract. Whisk together until milk and eggs are fully combined
Add flour, sugar, and salt. Whisk until smooth batter is formed
Allow batter to rest for 15 minutes
Preheat a non stick pan on medium heat
Coat with light amount of butter then ladle crepe batter in. Tilt pan around to create a thin layer
Cook the crepe for 2 minutes then flip and cook the other side for 1 minute
Repeat until all desired crepes are cooked
Fold the crepes into triangles and set aside

Sauce
Preheat a large saucepan on medium high heat
Add orange juice, orange zest, butter, and sugar. Stir until sugar is dissolved and butter has melted
Allow sauce to simmer until thickened (around 5 minutes) Stir ocassionally
Pour orange liqueur and carefully light on fire
Flambe the sauce until the fire subsides
Turn off the heat and add the crepes into the sauce
Coat the crepes in the sauce
Repeat until all crepes are coated

Whipped Cream
In a large bowl, add heavy cream and sugar
Using an electric hand mixer, whisk until the cream creates at least soft peaks

Assembly
On a plate, place 3 crepes then spoon the orange sauce underneath the crepes
Layer the orange slices at the edge of the crepes
Pipe whipped cream over the crepes
Garnish mint next to orange slices
