Dim sum can be fiddly and time consuming to make. This is like a cheat - you get to eat tasty dumplings without all the hassle. I’ve given rough measurements for the filling of these rice paper dumplings, but change the amounts to suit you - or change the ingredients to make your own versions. You can wrap anything in the rice paper so you can be as creative as you like!

Serves 2
75g Chinese chives
100g tofu
100g rice noodles
50g shiitake mushrooms
2 garlic cloves
2cm ginger
1 tbsp sesame oil
1 tbsp soy sauce
Rice paper

I stuffed LOADS of filling into each one which turned out to be too big. Think I was too hungry and eager to eat... Probably best to use less filling in each one so you have sensible sized dumplings (*≧ω≦*) but I recommend this for anyone else who might be a hungry foodie like me - it's so satisfying when you get to have a big bite of this!

I recommend using warm water for rehydrating the rice paper. Cold water works too but it takes longer to soften so it makes the whole process take much longer. Be careful that you don’t leave it in the water too long as it’ll start to disintegrate.

I specifically chose to use these for my fillings just so that I don't have to cook it before I wrap it - it allows me to skip a cooking step and speed up my cooking time. I've tried lots of versions and never get bored of these rice paper dumplings! Test it out for yourself and try different fillings. Hope you have fun making some rice paper dumplings
